Fagiolo Viola di Assiago Seeds

$4.00

Gorgeous, violet-purple dry bean seeds produced on vigorous climbing plants that originated in the Asiago region of Italy. This one came to us from our seed-head friend Bronwen Heinrich who got it from a fellow that did a trade with someone living in Volpiano, Italy. Bronwen loved it so much she passed it on to us and now we love it too. Strong vines produce flat green pods which are edible if you harvest early. We leave them to plump up with fat seeds then shell out the seeds for tasty shelly beans. Leave some of the pods to dry down on the vine and shell out the tasty, purple, dry beans for winter use. We noticed that the plants throw out the occasional deep blue bean. We are selecting for purples but couldn't resist offering you the opportunity to try this amazing bean.
